Foodie Friday #6 - Appetizers and Desserts

I wanted to thank you all so much for helping me spread the news on Foodie Friday. It is rare for E to be off on a weekday so it definitely helped get the party going without me having to do all the pimping...I mean, primping! :) Just for kicks, how bouts' we do the same this week? Link up your dishes and send an email to a one foodie friend to let them know to pop on over and link up as well. The more people to party the more traffic your recipe and blog will get...makes sense, right? Last week we had 100 recipes...let's see if we can hit 115 this week!

I am on an appetizer kick as of late...anyone catch the Spicy Black Bean Dip I blogged about Tuesday? Tasty!! Anywho...I thought I would shed some light on some of the tasty apps that caught my eye this week...

Beet Hummus - Once Upon a Tomato

Liz at Once Upon a Tomato linked up my newest best friend...or a version of it. The Beet. See how beautiful this yummy hummus spread looks? It looks even yummier (word? hmmm...) when paired with the amazing picnic lunch she served it with...you absolutely MUST check out the spread on her blog. That is one picnic I am sad to have missed! This talented lady can cook, garden, and is an amazing artist ta boot!! Don't believe me? Check out her Etsy shop here...beautiful work!
Asparagus Parmesan Tart - Footprints From Otter Hill

Deb at Footprints From Otter Hill thrilled me by linking up this fabulous savory tart. OK, in all fairness this could go either way, main dish or appetizer, but given the amount of butter that seems to grace a puff pastry for the sake of your arteries (and fitting it into this post) I shall classify it as an appetizer. I think this would be a perfect app with a bottle of wine, some good music, and great conversation. I also think it would pair nicely on a nice warm evening, under the stars and sitting on our brand new wooden deck off the side of the house...hint hint, E... If you haven't popped over to check out Deb's blog now is a great time to say hello!

And in true LBR fashion...we tend to over indulge on apps so often that we have to skip the main meal but we never ever skip dessert...

Chocolate Peanut Butter Whoopie Pies - Things That Make You Say "Mmmmmm"!

Karyn at Things That Make You Say "Mmmmm"! is genius when it comes to whipping up desserts!! I am so happy she hopped over to our party last week because this gal can make a mean Whoopie Pie...amongst other things!! Peanut Butter? Oh, yeah, baby. After My Mom and I foraged our way through Maine on The Quest for the Perfect Lobsta Roll I wondered if our next trip should be in honor of Maine's official State Treat...the Whoopie Pie. Surely those are in season year round... If you are in the mood for some super delicious treats make sure to stop by and see Karyn. If you ask me, she is the dog's tuxedo!


Push Up Popsicles - Em-agination

Push Up Popsicles are Emily's Frankenstein creation which came form combining her love of 2 classic frozen treats - the style of the creamy orange Push Up we all loved as kids mixed with the flavors of The Jello Pudding Pop infamously pushed by good ole Bill Cosby. That man haunted my every childhood foodie craving daydream when, in the 90's and completely out of no where, they discontinued the best frozen treat every to be created. Oh, and don't be fooled - the new pudding pops on the market are not the same...they are just a mocked up version of the what the originals once were. Anyway - Emily took her love of the Pudding Pop and brought it to the 21st century with a classy adult twist. Hooray for Emily and her Em-agination! Want to create some of your own? Emily can tell you where to buy your very own...just ask her!!

A Fiesta For Your Mouth...

I am in the process of working on some home improvement projects so I can satisfy your DIY cravings later...for now I leave you with this simple dip to pump up the volume on your next fiesta...Perhaps Cinco De Mayo??

If you have kids in the 4-14 range or if you yourself can remember being a slightly immature young one, you all know the little song I am about to sing for ya...

Beans Beans the magical fruit,
The more you eat the more you toot,
the more you toot the better you feel,
Beans Beans the magical fruit!

Charming, right? This is such a versatile fruit...oh, just go with it. And yes - it is magical and for those who don't eat it often it will indeed make you toot! But the thing they don't mention is how NUTRICIOUS and versatile beans are...well, maybe that is the magical part? Regardless, this dip is da bomb if I do say so myself. It is super simple to make, super healthy (but not in that horribly tasteless kind of way), and again - VERSATILE!!


Want some?? I know you do...first let me do a little lecturing and then we can begin...

You all know I am a bit of a health nut. I no longer eat meat, I do not eat eggs and milk (though I do love me some cheese!), and we eat a multitude of veggies, fruits, whole grains, legumes, and nuts throughout the week. So please listen when I tell you...

DRIED BEANS are where its at!!

Most canned beans have added sodium, preservatives, and/or the cans are lined with chemicals such as BPA. Now I ain't a saint - I eat a fair amount of unhealthy crap too...but the best part of dried beans is that they are CHEAP!! The other nice thing is you can make a huge amount of beans ahead of time and freeze them for future use. This little tip has drastically cut down the amount of time I spend soaking then pressure cooking me ole' beans! Oh - and if you weren't sold on dried beans yet let me provide one other little nugget...there is no waste such as cans to recycle!! Most bulk items come in plastic bags (I guess you have to use something) which are easily reused or recycled. Removing my soap box now...

So - let's get cracking and whip up a batch...shall we??

1. Presoak your beans - you can do it overnight or for a few hours. Presoaking dry beans helps them cook faster and also releases gasses which will help for better digestion...Do I need to spell it out for ya??

2. Place soaked beans in the pressure cooker and cook until it starts to scream...then let it go for about 10 minutes. I don't really have a good timing structure down for this because everyones pressure cooker is different and ours happens to be on its last leg so it is super crazy...

If all this seems to much for you then just use your canned beans!! Use 2 cans and please, for the love of the Food Gods, RINSE THE BEANS VERY WELL!!!!

Here comes the easy part...

Throw 2 cups of cooked beans (or 2 cans...it doesn't much matter if you are off a bit) in the cusinart and let er rip...

Slowly add 1/4 cup water. If you want the consistency a little thicker add less - thinner add more. A lot of people will use olive oil instead of water but it is sooooo not necessary. Using water keeps the fat content down while making your bean dip a healthier alternative to store bought dips.

It's done! But that is too basic...let's spice things up a bit...

1 Tbsp Cumin
1/2 tsp Cayenne
1/2 tsp salt
1/2 tsp pepper



Now you have yourself a little Mexican black bean dip with a kick! This dip is perfect on its own with some tortilla chips but check out the following if you want to kick it up a few more notches:
  • As a spread for sandwiches
  • To give a little oomph to a burrito
  • How 'bout layered on some nachos with chips, cheese, salsa, guac, olives...I could go on and on!
    • Add diced avocado to the mix and it becomes a whole other animal
    • Look a little plain? Sprinkle with some room temp salsa right on top...a fiesta for the stomach, I tell ya!
    • Ohhh - and the doozy of all doozies - Put a layer of cream cheese in a Pyrex, layer this on top, top with shredded cheese and bake at 350 till bubbly...HOLLA!!!
    This little dip doesn't last long in our fridge. We use it for just about anything! Also - when last minute company stops by, I always have leftover frozen beans that I can whip up to make something quick and easy.

    NOW ON WITH THE PARTY...
    Last week we had lots of great recipes and, of course, my super long Lobsta Roll post. Thanks to those of you who were able to read through the whole thing without falling asleep!! :) I know it was a long one but I promise to keep it brief from now on...and at the urging of E who is my editor (although not a very good one if you have noticed the amount of spelling and grammar mistakes I make!).

    First off, I want to thank both BJ and Melissa for introducing me to The Pioneer Woman...ummm...never heard of her before you ladies linked up. Yee Hah...I am in for some real tasty treats!!


    BJ at Sweet Nothings and her Fab Buttery Rosemary Rolls... If ya'll haven't met BJ then pay close attention here - SHE IS PAULA DEAN IN DISGUISE. I am totally serious. Ignore the photos on her site - I am 99.9% this is Paula acting with a moniker. For realz...and I totally agree with Paula BJ, you CAN eat these suckers with jam. Sweet and savory were meant to be!


    Do I even need to tell you how these babies struck my fancy?? Oh, they struck it all right!! The combination of lemon and raspberries is so fresh...it's like a crisp summer morning before the sun wakes up...or, in reverse, a cool summer evening right before the sun goes down. Whatever way you slice it, these Raspberry Lemonade Angel Food Cupcakes are pure heaven!! Did Someone Say Party...no, really, Did Someone Say Party is responsible for these delights. Make sure to pop over and see what else Gretchen and Heather have been up to. They are so so close to 100 followers...I am sure if we all joined in we could get them up to the big 1-0-0!!


    Thanks to the ladies at Turbo Bubblegum and these Creamy Chicken Taquitos (Healthy Version) my life can begin again. You see, when I was a younger gal living in the city I became addicted to 7-11's Jalapeño Cream Cheese Taquitos. They would sit on those hot rollers under the neon heating lamp and sing out to me like the Sirens to Odysseus...."Buy me, Eat me, I am healthy...I swear..." - right...final last words. Though I proved to be captured a time or 2 by their whispering sweet nothings, much like Odysseus, I eventually prevailed. I said no more to the rampant taquito and moved on with my life...though it was never quite the same.

    Ask anyone on a diet...it is very hard to cut out an entire food group (especially one that is made of creamy cheese and a jalapeño kick) without always remembering the source of your addiction and it's sweet renderings plastered to your hips and thighs. I am happy to say, since seeing these healthier more growns up (yes, I misspelled it on purpose because it is oh so much funnier this way) version for this older and wiser gal, I will soon be back in the boat attempting to steer this Odyssey toward Taquito Heaven! How is it possible these lovely ladies only have 18 followers...surely we won't leave them hanging!!


    ANNDDDD - In honor of Earth Day I thought I would share this special link with you!! Kim at Too Much Time on My Hands linked up with this Homemade Vegetable Wash. Honestly, I can not believe people were ever buying veggie wash...especially when it now seems so easy to make!! Seriously, folks...isn't there something else you could do with that money...like send it to me if you want... :) Kim has a super cute blog with a name that keeps screaming in my ear...oh, wait, that is E freaking out over another new project when there are sooo many others left to finish. I know we have ALL been there!! Go stop in and say hello - Kim is a crafty chick who would LOVE to hear from you!!

    Our Quest for the Perfect Lobster Roll!



    Sorry in advance for the super long post but when on a mission you must be thorough and complete in your reporting style...this quest was no exception...

    Last week my mom and I headed to Maine on a mission...well, two actually...

    1. A surprise visit to my sister and her husband.
    2. Our quest to find the PERFECT lobster roll, "lobsta" to those in Maine. I will continue with my use of lobsta throughout this post as this word was repeated ENDLESSLY throughout our trip...

    Surprising my sister was the easy part. Land in Boston, shoot out a text with "Call me asap" (in order to scare her into thinking something is wrong so she would call me faster ) and soon receive a return call. The conversation went a little something like this:

    B - "Nat, what is the weather like in Maine?"
    N - "Ummm, about 28 degrees?"
    B - "Oh, so it's about the same as Boston right now..."
    N - "You are in Boston?"
    B - "Yes! Mom wants to know what you guys want for dinner!"

    And that's how it's done. With a 5 hour drive ahead of us we set off for the second part of our mission...

    Proof That we MUST be in the Right Place! It's the Way Life Should Be...
    Though the surprise to my sister was easy - the quest for the perfect lobsta roll was a whole other story!! One should not take on such a quest in the off season without being forewarned that your mission will be a long and challenging one. You may drive 20 miles out of the way for the illusive "best" lobsta roll to find The Clam Shack closed for the season...which ironically opens in 5 days from the very moment you are standing and drooling at it's order window...arghhh...

    You may also be soooo satisfied by a specific lobsta roll that you accidentally drive off the side of the road and into a muddy ditch at the very thought of its buttery crispy bun and chunky sweet lobsta goodness...


    Thank goodness for AAA!
    Regardless of your situation - please know, this is a mission not to be taken lightly. This is a mission of pure pleasure and gluttony...and one we thoroughly enjoyed.

    After traipsing the outskirts of Massachusetts and the inland of New Hampshire we hit the bottom of Maine. Immediately there were signs of good things to come...

    First Lobster Sighting!
    Our first stop was Kittery, Maine which is just North of the border and a place we had been before. Though not on a mission our previous visit, we were sure to hit it up Bob's Clam Hut which was guaranteed to delight! With our travel weary bodies we hoisted ourselves up to the counter to order our first lobster roll of the mission.

    I can sum this baby up in 4 words - Buttery, Sweet, Crunchy, and Creamy. That is all that truly needs to be said but for the sake of Old Bob I will go just a wee bit further. The lobster was chunky and bright red...super fresh, plump, sweet, and with just a hint of mayo mixed in. The bun...ohhhh, the bun....the best of all buns to come this baby was buttery and crisp with the right amount of crunch and soft fluffy texture inside. Our plate was followed up with a healthy dose of fries and a nice cold pickle wedge...

    The Judging Begins...
    At $13.95 including fries and the 2 tubs of tarter sauce I requested - this baby was well worth its weight in gold lobster. We were tempted to order another but, alas, we had to save room and push on...

    Our second lobster roll jaunt was another I had visited before...The Thirsty Whale in Bar Harbor. Normally this place has a line out the door so when we walked in to an empty bar I new we were in trouble...we walked in, sat down, and were all set to order when we found out....No lobster rolls. Booooo. Instead we decided to order a basket of fried pickles before heading down the street to another recommended townie spot...Geddy's. First - let's have a look at these pickles...

    Down the street we came across the aforementioned Geddy's. The interior was, well, busy to say the least. It seemed like a great place to come with a group, have some drinks, and chow on some good ole' fashion fried delights!! We, however, were still jonesin' for the best Lobsta Roll...



    We explained our mission to the Waitress and in about 5 minutes flat our order was on the table...I didn't even have time to color my place mat!! Big plus for speedy service but I was more concerned with my roll so we dove in... after taking a few pics of course:

    No Butta?
    This lobster roll was quick and speedy but left us feeling a bit soggy and limp. The lobster seemed to be previously frozen and was a bit stringy and waterlogged...similar to when you buy frozen crab legs and try to do a quick defrost. Plus it was cold...very cold which tends to steal the flavors from food. Have you ever noticed when you have something piping hot or freezing cold it tastes much different then when it is luke warm or slightly chilled? This was such the case for our poor Lobsta Roll. Our bun was grilled but no butter...what is a Lobsta Roll without Butta??
    Mom - Clearly Unimpressed With Her Lobsta Roll...Seriously? No Butta??
    My mom was quick to sum it all up...though they do have fresh lobsters in a tank, my mother believes those are just pets..."you never eat pets...that's why they never name cows or chickens." Oh to be witness to her many nuggets of wisdom...

    Despite all of the downsides listed, Geddy's Lobsta Roll was still good...just not great. At $16.95 a pop you would hope for a bit more freshness and oomph to your roll. Perhaps during the season the lobsta roll would have been fresh and not frozen...regardless we had to judge on this instance and this instance only. Let's just say we were happy to have ordered just one because we got wind of another restaurant in town that had opened early for the season...right next door from where we were!! Yeah!!

    Enter Galyan's. My mom took an instant liking to the place with it's Irish name, Victorian look, and fresh coffee smells upon entering. She was already sold...but I wasn't so easily swayed. Once again we ordered 1 lobster roll. Judging by service alone I would have to say this was the nicest of the 3 places we visited and by far had the best view. The waitress was super friendly and, upon hearing what we were doing, even had the chef split our lobsta roll in two! So sweet!! This Lobsta Roll came with some chips and a side of slaw...not any old slaw...super slaw! I can't remember what she said was in it but my mom's spot on taste buds detected celery seeds which the waitress confirmed. It was a vinegar based slaw and I gobbled it up like nobodies business even though I normally HATE slaws!


    First I must start by saying that Galyan's Lobsta Roll was a bit less traditional than the other two we sampled. The added a touch of paprika to the top (which, although pretty, was definitely not needed) as well as a leaf of romaine lettuce. Again - not necessary but the crunch of the lettuce was a delightful little surprise. The bun was BUTTERED!!! Yeah - we found ourselves another buttered bun!! Though Galyan's buns were not AS buttered as Bob's (tee hee) we were super happy to taste its crunchy buttery deliciousness.

    At $15 bucks a pop this bad boy came in at the second priciest (or cheapest depending on how ya' put it) and was a delicious contender. At this point we did not stop at just the lobster roll...when I overheard the waitress telling the table next to us desserts I had to give in. What is pure decadence of lobster tasting without Creme Brulee to follow it up?? When this beauty came I was too excited to take pictures so I jumped right in...of course, after declaring it THE BEST CREME BRULEE I HAVE EVER EATEN...and I have eaten A LOT of Creme Brulee...I had to restrain myself to stop and take a pic or 2...

    Not only did this brulee have the crunchy top and creamy filling as most brulee's, but it had a saltiness to it that I have never ever encountered in another brulee. Like a burnt caramel or buttered cream...I can't explain it I just know it was something special. So special, in fact, that if I was on death row and they asked what I would like for my final meal I would ask for this...only this. After eating this I could die ~peacefully~...

    Although Galyans had the best dessert on the face of the planet, Bob's Clam Hut in Kittery has officially been declared the BEST LOBSTA ROLL in this edition of The Quest for The Best Lobsta Roll in Maine. Galyan's was a close second and Geddy's was a distant third...very distant...like a long lost somehow related cousin that you will never meet in your whole lifetime and probably will never even know he existed...

    Let's take one last look at Bob's clam Hut's divine lobsta roll - buttery buns and all:

    These Ginger Turkey purses are sure to delight!! Thanks to Sugar and Spice in The Land of Balls and Sticks this made E's top 2 recipes this week! We have yet to try them but they look relatively simple and super delicious!!


    Fried Pickles...YES, please!! You can see from above Mom and I were big fans of the fried pickles in Maine. When I saw these babies making the linky party circuit I hopped over right away and requested Melissa of Melissa's Cuisine to link them up here!! Thanks, Melissa!!

    Foodie Friday #3 - Show us What Ya' Got!!


    Hey Ya'll!

    I have been super busy this week with spring cleaning and over all de-cluttering.  I even bought a BIG something in AS IS as well as some little somethings to partially finish the buffet!!  I can't wait to share it all with you but you'll have to wait for next week because it is Friday and ya'll know that Friday is all about FOOD so let's get started!!

    This week I had a chance to make a couple of dishes from Week #1 that I hadn't had time to make last week...  Here they are in no particular order...

    Thai Chicken Soup

    I have to preface this by saying I am not a huge fan of curry.  I just never quite took to it.  This recipe whipped my taste buds around so fast I am now begging for more!  Of course, I omitted the Chicken and used vegetable stock, but other than that the recipe was true to form...this stuff will blow your socks off!  E is already asking for more...he was actually asking for more as he slurped the last bits from his bowl...  Thanks to Diapers and Divas to introducing me to my first curry loving good time!!

    Peanuttiest Blondies

    Thanks to Everyday Insanity (don't ya just love that blog name?) and her Peanuttiest Blondies.  These things are to die for!!  They are so good that Cindy uses the picture as her blog header...you gotta love a lady with good taste!  E and I whipped up a batch last night and I forced him to take half to work this morning so I wouldn't be tempted to eat the whole pan!!  If this is last thing you bake you would be a happy happy person!

    and this weeks...

    Blender Bread

    I have to give props to We Are the Joneses and their Blender Bread - this was soooo simple!!  Of course, I tweaked the recipe a bit to use wheat flour and flax eggs but they turned out amazing!!  They were SO good I am volunteering to bring the dinner rolls to Easter dinner!

    All of the recipes looked DELICIOUS but here are a few of the standouts for this week.  We didn't have time to make 'em all but we certainly plan to in the future!!

    Grapefruit + Lime Margarita

    A Mom Not A Professional...OK - in my opinion, these are some pretty freakin' professional looking cinnamon rolls - Blueberry Lemon Cinnamon Rolls to be exact!  There is nothing better than combining flavors you might not normally put together and ending up with a surprise like this.
